Hughes will undoubtedly remember the chocolate chip cookies I make. Countless batches have graced the oven, countless batches will go to his classroom treat days, and he will come home from college just to have some chocolate chip cookies. But Jettie, she's always been a bit different and I love that about her. She will ask for my Kale Chips after a rough day in preschool. We will make them as late night snacks through her high school years. She will have conversations with Hughes years after I've passed, "you remember Mom's kale chips!"
Yes, these are the things I think about. Leave me alone:)
And if you don't believe me about Jettie's love of Kale Chips. Evidence.
There is way more where that came from but let's start off with the simple recipe.
1 bunch of Kale
1 T Extra Virgin Olive Oil
1 teaspoon Sea Salt
1/2 fresh Black Pepper
Preheat oven to 400 and wash Kale
Separate stems from leaves and break apart into chip size.
Place everything in a bowl and toss. Put leaves in one layer on baking sheet. Bake around 10 minutes or when the middle starts to get toasty and the leaves turn dark. You're kitchen will start to smell like popcorn.
Promptly remove from oven and place chips in a bowl. Demonstrating the perfect color is the below chip removed from bowl for speculation.
Jettie spots perfect chip and devours.

Love this. She would get along well with my son who prefers dark/green/leafy over about anything. :) I am going to have to try this recipe!

(01.05.11 @ 11:30 AM)It is so good to know that I'm not the only one with "kale chip loving kids"! We started our healthy eating journey when our son was diagnosed with autism almost four years ago. Today, after tons of therapy and healthy eating (tons of organic kale chips), he is recovered!

Jettie is adorable...and how fun that you think about "signature" dishes that you can make that the kiddos will like forever.
